Ingredients
Directions
4 boneless, skinless chicken breasts (about 4 oz each) OR about 1 lb store bought thin-sliced chicken breasts for scalloppini (such as Perdue brand)1/4 cup grated Parmesan cheese or Parmesan cheese blend (w/Romano, Asiago, etc.)1 tbsp all-purpose flour2 tsp olive oil1 jar of your favorite marinara sauce (I like Trader Joe's Authentic Organic Marinara)about 1/2 cup shredded parmesan cheese or Italian cheese blend
Between two pieces of heavy-duty plastic wrap, pound chicken breasts to about 1/4 inch thickness (skip this step if you are using the thin-sliced chicken breasts). In a shallow bowl, combine the grated Parmesan and the flour. Dredge chicken breasts in the Parmesan mixture until well-coated, set aside. In a skillet, heat 1 tablespoon of oil. Add in two chicken breasts, cooking each side until golden. Remove from pan, add in additional tablespoon of oil, and repeat with the remaining chicken breasts.
Place chicken breasts on a pizza or jelly-roll pan. Top each with about 2 tablespoons marinara sauce and 2 tablespoons shredded Parmesan. Place under broiler for about 3-4 minutes or until cheese is completely melted and bubbly.
