Pineapple Chicken

Ingredients
-3 tbsp. of water-12oz of cooked chicken breast*, diced-1 green pepper, diced-1 med. onion, diced-1 clove of garlic, minced-1/2 tsp. of salt-1 tsp. of black pepper-1 c. of fresh pineapple, diced-2 cups of brown rice-2 tbsp. of balsamic vinegar*i like to grill my chicken on the Forman grill
Directions
in large skillet, heat 3 tbsp. of water over med heat.
add onion, green pepper, and garlic.
sweat veggies for 10 minutes.
meanwhile cook rice according to package directions.
add chicken, pineapple, salt, and pepper to veggies.
allow to heat through for 3-5 minutes.
serve over rice, drizzle balsamic vinegar over top.
