Ingredients
Parsley about 4 bunches or more depends how big they areonion 1/2olive oil 1 tbsplemon juice ( 1 lemon or less according to taste)Herbs ( basil, sage, rosemary, thyme) optionalGreen onions optionalbulgar 1/2 cuplemon skin shreddedsalt to tastetomato 2
Directions
Put the bulgar in warm water and leave till it softens a little
chop the parsley, if you do it with a knife i takes a long time but looks and tastes nicer
I cheat and I take the leaves put them in the mixer and pulse slowly till they chop but not squish, add in a big bowl
dice the tomato and add to the bowl, the smaller the better
dice the onions, the smaller the better
Add green onions chopped (optional)
Add Basil chopped (optional)
Add Sage chopped (optional)
Add Oregano (optional)
If you do not have fresh herbs, you can use dried ones or the italian spice mix
add lemon juice( 1 lemon)
add the olive oil
add salt
add lemon skin shredded about 1 tbsp
add the bulgar after draining
mix
Serve and enjoy :)
