Vegie BBQ skewers

10 wooden skewers (soak in water if using over open flames)200g marinated tofu (I use a sanitarium tofu product which is marinated in satay sauce)1 red pepper (bell pepper)2 large mushrooms1/2 cup tinned pineapple pieces1 tsp olive oil
Cut all the ingredients into chunks about 1/2-3/4 inch.
Divide everything into 10 and thread it all onto wooden skewers (soaked in water if using over open flame)
Cook on BBQ or griddle pan until cooked to taste.
Depending on the cooking surface, you may choose to add a little oil. This recipe allows for 1tsp of olive oil in the nutritional info.
