Veggie Confetti Potatoes

Ingredients
1 package Idahoan Four Cheese Mashed Potatoes1 cup Broccoli, fresh, chopped small1 cup Cauliflower, raw, chopped small1 cup Carrots, raw, chopped small2 tbsp Margarine2 cups water
Directions
Chop all the vegetables into very small pieces, about the size of a pencil eraser. Combine with the 2 cups water in a saucepan. Cover and bring to a boil, cook until vegetables are tender. DO NOT discard the water. Add the instant potatoes to the pan, stirring well. Once the potatoes are all mixed in, add the margarine (or butter) if desired. Note: there is plenty of flavor without the margarine, my boyfriend just likes the texture better with it added.

Makes approximately 3.5 to 4 cups, 4 servings.
