20 small potatoes, peeled3 parsnips, peeled1/2 cup heavy whipping cream (not whipped)1 stick margarinesalt and pepper to taste
Place potatoes and parsnips in a large pot of boiling water and boil until tender. Drain. Using heavy duty mixer, mix the potato and parsnip mixture with margarine and whipping cream. Salt and pepper to taste. This recipe makes 17 1/2 cup servings.
