Maple Nutmeg Pumpkin Rolls

1/4 c. warm water 1 Tbsp yeast2 tbsp. plus 1/4 c. sugar1/2 c. milk3/4 c. solid pack pumpkin1/4 c. pure maple syrup 2 large eggs2 tbsp. butter1 tsp. salt4 1/4 c. (about) flour 3/4 tsp. nutmeg
Stir 1/4 c. warm water and yeast in large bowl of heavy-duty mixer until yeast dissolves. Mix in 1/4 c. flour and 1 Tbsp. sugar. Cover with plastic and let stand in warm draft-free area until very foamy, about 45 minutes. (These times or for regular yeast. If you use SAF instant yeast it is much faster) Bring milk and butter just to simmer in medium saucepan. Remove from heat; stir until butter melts. Cool 10 minutes.
Add pumpkin, syrup, eggs, salt, nutmeg and remaining 1/4 c. plus 1 tbsp. sugar and whisk to blend. Whisk pumpkin mixture into yeast mixture. Using heavy-duty mixer fitted with dough hook, mix in enough remaining flour, 1 c. at a time, to form dough. mix until smooth and elastic, adding more flour if sticky, about 5 min. cover bowl with plastic and towel; let rise until doubled in volume, about 1 hour 30 min. grease a heavy baking sheet. punch down dough & knead until smooth. divide into 20 equal pieces. shape into balls and arrange on baking sheet, spacing 2 inches apart. cover with towel and let rise until almost doubled, about 45 minutes. Preheat oven: 425 degrees. Bake until golden brown, about 13-15 minutes.
