Udon Noodle Soup

Ingredients
2 oz. Udon Noodles1 quart vegetable broth1.5 Tbsp red miso (at the asian mkt)1/4 cup thinly sliced celery1/4 cup chopped scallions2 oz. shiitake mushrooms1 cup shredded napa cabbageSalt, to taste (personally, I don't think you need any!!)
Directions
~Prepare Udon according to the package directions
~Combine broth and miso and bring to a boil
~Add the vegetables, reduce heat, and simmer for 5 minutes.
~Add salt, if desired. I personally think that the broth and miso are quite salty enough!

*If you can't find red miso, use white miso or even an envelope of miso soup mix.
