Cheesy Potato Soup

Ingredients
2 large potatoes1/2 cup finely grated carrots1/4 cup diced celery1/4 cup diced onion3 cups vegetable broth1 3/4 cup evaporated skim milk4 oz. Sargento reduced fat Mexican cheese
Directions
1. Add all ingredients up to broth
2. Bring to a boil
3. Lower heat and simmer for 10 minutes
4. Mash potatoes with a fork against side of pan
5. Mix cornstarch w/ 1/4 cup of milk
6. Add to pot and thicken
7. Add rest of milk and heat for a minute
8. Add cheese and stir just until cheese is melted

    wonderful! i used a mix of brown and red potatoes because i didnt have enough brown. Had friends over who also loved it. If you like mashed potatoes and cheesy dishes this is an awesome dish. Leftovers were great for lunch too. - 10/22/09
