Mexican Rice

1 lb 93% lean Ground Beef1/4 c chopped Onion1 clove Garlic5 cups cooked Rice1 can Diced Tomatoes (about 1.75 c)1 cube Beef Bouillon1 tbsp Jalapeno Juice (the liquid in a jar of jalapenos) 1 c Boiling Water3/4 tsp Cumin1/2 tsp Oregano1/2 tsp Chili PowderSaltPepper
Cook rice in one pan. In another pan, cook together beef, onion, and garlic.
When done, mix together. Add diced tomatoes. Heat about 1 cup of water to boiling and mix with bouillon cube and jalapeno juice until well-mixed. Add to rice. Add cumin, oregano, and chili powder. Mix well. If necessary, add a bit more water so that the mixture is just slightly "soupy". Cook over low heat until thick. Add salt and pepper to taste.
Each serving is about two cups. I enjoyed mine with some cheese on top.
