Easy Apple Spice Cake

Ingredients

1 cup sugar1/3 cup butter (room temp)1 egg (or egg substitute)1/4 cup applesauce1/3 cup butter1.5 tsp vanilla extract1.5 cups flour (white/wheat)1.5 tsp baking soda1 pinch salt1.5 tsp cinnamon.5 tsp nutmeg2 cups apples, peeled, cored and choped1 cup nuts (pecans, walnuts, almonds)
1. Cream the butter and sugar, then add the remaining wet ingredients (egg, applesauce, extract).
2. Slowly begin to add the dry ingredients, mix well
3. Fold in apples and nuts (batter will be a bit thick)
4. Place batter into a 9 inch cake pan ([prepare with nonstick spray)
5. Place cake in a preheated 350* oven
6. Bake for 40 mins.
Notes - In my oven (which is not the best) the center is always a little undercooked which is what I like. If you do not, you may want to lower the cooking temp to 325*
