15 Bean Cajun Soup

1lb bag 15 bean cajun soup mix1 large oniongreen pepper (bell or Pablono)4 garlic cloves, crushed or chopped2 tablespoon olive oil2 teas fresh chopped thyme7 teas chicken base2 quarts water1 can diced tomatoessalt & pepper to tastepinch cuminfew shakes of tabasco (to your liking) or not
Makes 16 1/2 cup servings.
Soak beans overnight or for at least 6 hours. drain. Add 2 guarts water. They will need to cook 2 to 2/12 hours.
While the beans are getting started, saute onions, pepper, and crushed garlic in 2 tablespoon of olive oil until softened. Add to beans. Add the rest of the ingredients except the cajun spice that came in the bean package. Add the cajun spice the last 1/2 hour of cooking.
You can serve this as is or with crumbled bacon on top and maybe some elbow pasta or rice.
Right out the pot is my favorite. My family likes to mix it up.
