roasted acorn squash w/o sugar

Ingredients
1 acorn squash, halved and seeded1 tbs olive oilkosher salt to taste
Directions
place halved squash cut side down on greased a baking sheet
cook at 350 for 30 min
remove from oven, carefully slice, about 1 inch thick
place flat on backing sheet
drizzle with olive oil, sprinkle with salt
bake another 30 min, or till desired tenderness

    After the initial baking, I just cut the squash in quarters and brushed it with melted margarine. (I didn't slice it and didn't have olive oil.) Turned out pretty good. - 2/25/10
