Ingredients
180g (1 1/2 cups) cornmeal80g (2/3 cup) whole wheat flour12g (1 T. ) sugar1/2 tsp. salt2 tsp. baking powder1/2 tsp. baking soda1 1/2 cup buttermilk2 eggs2 T.lard or bacon grease
Directions
Preheat oven to 425. Place lard or bacon grease in a 10 inch cast-iron skillet. Place skillet in oven while mixing batter. Combine dry ingredients.Whisk together buttermilk and eggs. Stir into dry ingredients and mix gently. Pour excess melted grease into batter and mix. Pour batter into skillet. Bake for abour 20 minutes or until light golden brown.
