Italian Chicken

Ingredients
500g chicken breast1 medium onion1 tbsp Olive Oil250g mushrooms1 red or yellow pepper400g chopped tomatoes300ml chickem stock1 tsp mixed herbs1 tbsp corn flour
Directions
Cut the chicken into 1 cm pieces.
Brown these in the olive oil. Remove from pan.
Add the onions, peppers and mushrooms (all sliced) to the pan.
Cook for 5 mins.
Return the chicken to the pan with the chicken stock, tomatoes and mixed herbs.
Stir well.
Bring to the boil.
Cover and simmer for 40 mins.
Mix Cornflour with 2tbsp water.
Add to dish to thicken sauce.

Serve with rice or pasta.
