Stir Fried Vegetables

Ingredients
2 c summer squash sliced2 c zucchini sliced 1 cup sliced mushrooms (fresh)1 c sliced red onion4 tbsp low sodium soy (more or less depending on your taste)4 dashes fresh ground pepper1 tbsp extra light virgin olive oil1 tbsp I Can't Believe It's Not Butter
Directions
Heat oil in frying pan over medium high heat. Add all vegetables and butter. Cook until vegetables become tender. Add pepper and soy to taste. Cook additional couple of minutes. Serve and enjoy.
