Confetti Fried Rice

Ingredients
1 tsp olive oil1 medium onion, diced2 cloves garlic, minced1 red pepper, diced4 cups cooked long grain rice1 cup frozen peas4 eggs, beaten1 Tbs low-sodium soy saucesalt and pepper to taste
Directions
Saute the onion, garlic, and red pepper in olive oil until soft, about 3 minutes. Add rice and saute, stirring occasionally, until rice begins to get a little crisp, about 5 mintues. Add frozen peas and cook, stirring occasionally, for about 1 minute. Stir soy sauce and eggs into the rice mixture and cook, stirring until eggs are just done, about 1 - 1/2 minutes. Add salt and pepper to taste. 4 servings
