Filet Mignon Teriyaki with Vegetable Stir-Fry and Rice

Ingredients
Filet Mignon, 8 ozBroccoli, fresh, 1 cup, choppedDole Mini-Cut Carrots, .5 cupBertolli Extra Virgin Olive Oil, 1 tbspLawry's Teriyaki Marinade with Pineapple Juice, 3 tbspGiorgio Baby Bella Mushrooms, 3 oz (sliced)Success Boil-in-Bag White Rice, 2 cupGinger Root (diced), 1 tsp
Directions
1. Marinade filet mignon with 2 tbsp of Teriyaki sauce.
2. Leave in refrigerator for 3 hours or more.
3. Steam carrots and broccoli in 3qt. filled with 2 cups of water.
4. Saute mushrooms and ginger in 1tbsp of oil.
5. Add carrots and broccoli with 1 tbsp of teriyaki sauce.
6. Cook rice to package directions.

    This turned out SO wonderful! Will definitely be doing this again. Since there was no directions for cooking the meat, I sliced mine up so it was more a "stir fry" size and topped the veggies and rice with it. - 11/24/10
