Dinner - Tuna Patty Melts

2 cans starkist chunk light Tuna in water, drained2 Egg whites13 Nabisco Saltine Crackers, crumbled into small piecesSalt and Pepper to taste8 slices Bread4 slices Kraft Free American Cheese Singles4 Tbsp. Kraft Light Mayonnaise
Mix tuna, egg whites, crackers, salt and pepper in small bowl.
Spray nonstick frying pan with cooking spray. Form tuna mixture into 4 patties and place in pan on medium heat. Cook 3-5 minutes on the first side. When the bottom of the patties are golden brown, flip them and add the cheese. Cook 3-5 minutes.
NOTE: I use 'Italian Bread.' This is just like normal white bread, but only 40 calories a slice.
You can make a lighter version of this by leaving out the cheese and mayo. I can't resist it myself, but if you have the self-control that I lack, it will have the following nutritional values:
