Spinach Rotini Pesto Salad

1 cup Onion1/2 cup Green Bell Pepper2 cup Frozen Spinach1 cup Sugar Snap Pea in Pod2 medium Tomato1/2 Cucumber with peel chopped1 Stock Celery sliced13.25 oz box Rotini Whole Wheat Pasta1 cup Pesto Sauce1 tbsp Olive oil
Make Pasta as directed on box. Heat large sauce pan with light film of olive oil.
Cook onion, green peppers, and spinach for a few minutes then add peas and tomato.
Peas warm and lightly soften but still have a fresh crunch. Reduce heat.
Add pesto sauce, cucumber and celery to warm. Add cooked pasta and toss.
Serves 6 adults
