Ingredients
Directions
Things You'll Need:12 oz. Soft Cream Cheese5 Eggs1/2 cup of GNC 100% Whey protein - Banana Cream1/3 cup Whole Wheat Flour16 packets of Sugar Substitute2 teaspoons of Vanilla Extract1 teaspoon Baking Soda1 cup Chopped Almonds1 cup Wheat Bran1 Loaf PanNon-stick Cooking SprayElectric MixerLarge Mixing BowlSpoonSpatula
Step 1
Preheat the oven to 325 degrees Fahrenheit.
Step 2
Even if your loaf pan is a dark, non-stick pan, spray it just in case.
Spray the loaf pan with non-stick cooking spray. This will prevent your banana bread from sticking to the pan.
Step 3
Mix two eggs and the cream cheese in a large mixing bowl. The batter should be thick, smooth and fluffy.
Step 4
Mix in the remaining eggs. Add them one at a time and continue mixing steadily at a medium rate of speed.
Step 5
Slow the speed of the mixer. Since you will be adding dry ingredients, you need to slow the mixer so that the flour and other powdery ingredients do not fly out of the bowl.
Step 6
Add the bananas, protein powder, wheat flour, baking powder, sugar substitute and vanilla extract. Continue mixing until the batter is smooth and even in color and consistency.
Step 7
Mix in the almonds and the wheat bran. These will add texture to your batter. Be sure that all the almonds are completely coated with batter before turning off the mixer and moving on to the next step.
Step 8
Once you have added all the ingredients, the batter will be light brown and a little lumpy from the almonds.
Pour the batter into the loaf pan. Use a spatula to make sure that you get all the batter out of the bowl.
Step 9
Often the top of the loaf will "crack" when the banana bread is finished.
Bake for 45 to 55 minutes. You will know the banana bread is done when it pulls away from the sides of the pan and is firm to the touch in the middle of the loaf.
