Sausage Quiche

Ingredients
2 cups chopped onions2 Tablespoons olive oilsalt, pepper and ground sage to taste1/4 cup white wine3 large eggs Heavy cream to equal 1 1/2 cup liquid1/4 cup Swiss cheese, shredded3 links Italian sausage, cooked and sliced1 recipe pie pastry for 9 inch pie
Directions
Prepare pastry and put in 9-inch quiche pan with removable bottom. You may use a 9 inch pie plate instead. Saute chopped onions in olive oil until soft. Add wine and cook until liquid is absorbed. Add salt, pepper and sage to taste. Put onion mixture in bottom of crust. Beat eggs with a wire whisk and add cream to equal 1 1/2 cups liquid. Pour over onion mixture. Put grated cheese on top. Arrange sliced sausage on top. Bake at 375 degrees F for about 35 minutes, until set and brown on top. Serve slightly warm or at room temp. 8 servings.
