Aloo Chole

Ingredients
2 tbsp canola oil1/4 cup chopped ginger1/2 cup chopped onioin15 oz canned chick peas 15 oz diced red potatoes2 diced plum tomatoes1/4 cup chopped cilantro
Directions
Dice and boil potatoes with 2 tsp of salt. Drain and set aside. Drain and rinse chick peas. Heat oil in a pan over medium heat for 1 minute. Add ginger, 1/4 cup onion, 1 tomato and let simmer for 1 minute. Add chick peas and potatoes and stir constantly for 2-3 minutes. Add Arora Creations Punjabi Chole Spice blend and continue stirring for 2-3 mintues. Finally, mix in remaining chopped onion and tomatoes, stir, and remove from heat.
Spice mix: Roasted cumin, amchur powder, roasted coriander, black salt, ground chilies, salt, ground mustard seeds, black pepper, cinnamon, cardamom, cloves
