Sneaky Chef Power Breakfast Cookies

Ingredients
1 large egg6 tbsp walnut, almond, or canola oil6 tbsp brown sugar1 tsp vanilla extract3/4 cup Purple Puree (see below)1 1/4 cup Flour Blend (see below)1/2 tsp baking soda1/2 tsp salt1/4 cup unsweetened cocoa powder2 tbsp Ground Walnuts (don't blend too fine or long or you'll get nut butter)1 tsp cinnamon2 tsp instant coffee granules (I just put coffee grounds in a blender to make them really fine)Powdered sugar, for dusting
Directions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper (or spray with oil). In a large bowl whisk together the egg, oil, brown sugar, vanilla, and Purple Puree. In another large bowl, whisk together the Flour Blend, baking soda, salt, cocoa powder, ground walnuts, cinnamon, and coffee granules. Add the dry ingredient to the wet and mix just enough to moisten the dry ingredients. Drop large tablespoonfuls of batter onto the baking sheets, leaving about an inch between each cookie. Flatten the cookies with the back of a fork. Bake 12 to 14 minutes, until lightly browned around the edges. Remove from the pan and let cool on a rack. Dust with a little powdered sugar. Tada!
