Caramel Apple Salad

Ingredients
8 oz. tub of Cool Whip FREE1 box sugar free instant Butter Scotch Pudding mix14 oz. can pineapple tidbits in juice4 large Red Delicious or Fuji Apples (or more)4 large Granny Smith Apples (or more)
Directions
Combine pudding mix and pineapple (with juice) in large bowl. Mix well and set aside. Dice apples into small pieces and combine with pudding mixture. Fold in Cool Whip FREE till well mixed. Chill and serve.

** I like to make this with as many apples as I can put into the pudding mixture and still have the apples pieces fairly well coated ... lots more apple than creamy mixture ... almost like a dressing.

** This is also delicious made with Sugar Free Vanilla pudding. It doesn't have the same 'caramel apple' flavor, but it is incredibly yummy!

    *LOL* I totally agree ... but actually my serving calculations are based on 1/2 of an apple per serving (+ all the other ingredients of course) but I often make it with as many apples as I can pack in and still have a little 'sauce' on them ... so larger servings are okay too! ;)

    Absolutely loved this recipe!! Apples, Pineapple, Cool Whip...all of my favourite foods. If you make the recipe using 8 apples, be sure to use the largest bowl in the house...this salad is big. - 8/26/09

    Tastes too good to be healthy, but it is!!!! YUM!!!
    (I drained "most" of the pineapple juice into a bowl and set aside to see how runny it would be on its own. I was glad I did because I didn't even use the juice I set aside.) - 8/29/09

    This was SO good. I couldn't get the butterscotch pudding mix so I used 4 pudding cups, reduced the amount of cool whip and omitted the pineapples so it wouldn't be too runny. It added to the calorie count a little but it was SO worth it! Can't wait to try it with the mix and pineapples. - 7/4/09
