Cucumber relish

1 Cucumber, peeled and seeded2 scallions chopped1 small carrot chopped2 tbsp. sugar1 tbsp. rice vinegar1 tbsp. reduced fat soy sauce
Directions
Mix all of it together and refridgerate.
