Sweet Potato Salmon Cakes

1/4 cup Sunflower oil1 large carrot diced1 Yellow Pepper2 medium stalks celery2 cloves garlicJuice of one lemon12 oz Salmon fillets2 medium sweet potatoes, baked1 cup white rice, jasmine2 eggsPanko for light coating
Makes 7-8 servings.
Bake sweet potatoes.
Saute pepper, celery, carrot and 1 clove of garlic until nice and soft.
Poach salmon with lemon juice and other clove of garlic.
Cool all. Remove skins and bones. Mush all together with hands and/or spoon. Add eggs and mix well.
Form into patties, lightly coat with panko and chill for a few minutes while the oil heats.
Fry to golden brown on both sides.
