One large chicken breast, no skin - slicedOne cup sugar snap peasOne medium green pepper - slicedOne x 250g pack Udon noodles plainAprox 30gms cashew nutsOne tsp sesame seed oilOne tbsp oyster sauceOne tbsp Sweet Chilli Sauce (or less to taste)
Using sesame oil stir fry the sliced chicken until cooked, add peas, pepper & nuts and toss through for approx one minute.
Add noodles, oyster sauce, chilli sauce and a dash of water and stirfry for another one - two minutes until cooked.
Serve immediately
