Zucchini Muffins

1 egg.5 cup oil1 cup grated zucchini1.5 tsp vanilla extract1 cup brown sugar 1 cup all purpose flour .5 cup whole wheat flour .5 tsp sald.5 tsp baking soda.5 tsp baking powder .5 tsp cinnamon.5 cup chopped walnuts
1. preheat oven to 350 degrees
2. grease 12 muffin cups or line with paper baking cups.
3. mix togerther egg and oil. add zucchini and vanilla and stir until blended. set aside
4. combine brown sugar, flours, baking soda, baking powder, and cinnamon in a large bowl
5. add wet ingredients to dry ingredients and stir only until dry ingredients are moistened
6. fill muffin cups 2/3 full
7. bake 15-20 minutes or until toothpick inserted comes out clean
