Yogurt and Cucumber Salad/Sauce

1 Cucumber2 Cups Lowfat Yogurt1-2 Cloves garlic1 Tsp saltJuice of 1 lemon
If possible, drain the yogurt first. Do this by lining a mesh strainer with a coffee filter, pouring in the yogurt, and letting the liquid drain off into a bowl in the refrigerator.
Cut the cucumber into small slivers for a sauce, or roughly chop for a salad.
Mash the garlic with the salt in a mortar. Add the lemon juice, then very gradually mix in the yogurt. When well-combined, add the cucumber. Refrigerate or serve immediately.
Makes approximately 3 cups.
