Vegan Cheese Spread

Ingredients

14 ounces firm tofu (NOT silken)4 T tahini4 T fresh lemon juice6 T nutritional yeast flakes3 T light miso2 t onion powder1/2 t garlic powder1 t smoked paprika1/2 t dry mustard1 1/2 t salt
Drain tofu well.
Crumble tofu into the bowl of a food processor.
Add remaining ingredients.
Process several minutes, stopping to scrape the bowl down periodically.
Chill several hours for best flavor.
Sometimes I split a batch of this after processing and flavor 1/2 of the batch with additional things - roasted red pepper and basil; cayenne, chipotle and fresh chopped cilantro; minced red onion and parsley. I'll throw just about anything in there!
Makes about 48 one tablespoon servings.
