1/4 cup Pine Nut1 cup Brown Rice, long grain, 3 cups Water1 Can Diced Tomatoes w/ Basil, Garlic, and Oregano1 Tsp Extra Light Olive Oil1/2 cup Tomato Paste1 Glass Red Wine16 Grape Leaves1 cup frozen Spinach1 Tbsp Dijon Mustard1 Tbsp Oregano, ground3 Cloves minced Garlic
Toast Pine Nuts and set aside. Saute garlic and rice in EVOO until golden. Add Spinach, Diced Tomatoes, Oregano, Lemon Pepper, and Water. Bring to Boil. Simmer 45 Minutes or until Rice is Tender. Add Nuts to Rice Mix. Spoon 1/16th of mixture into each grape leaf, fold burrito-style to seal and place seam-side down in a shallow baking dish. Mix Tomato Paste, Wine and Dijon, and pour over top. Cover and bake 25-30 minutes until leaves are tender. Serve 4 stuffed leaves per person, along with toasted pita wedges and hummus.
