Cranberry-Orange Pumpkin Granola Cookie Bars

1/2 C. Newman's Own Organics Honey Flax Flakes Cereal, or other bran-like flakes, Crushed lightly (Note: measure the 1/2 c. before crushing)3/4 C. Oats1/4 C. Whole Wheat Flour1/8 C. Wheat Bran1/2 TSP. Baking Soda1.5 TSP. Cinnamon1/2 C. Pure Pumpkin Puree2 TBS. Milled Flaxseed1 TBS. Orange Blossom HoneyZest of One Orange1/3 C. Frozen or Fresh Cranberries1 TSP. Domino Granulate Light Brown Sugar (Optional)
Combine all dry ingredients in one bowl, and wet in another, leaving out the brown sugar. Combine wet and dry well, and press into small baking dish that's been sprayed with Pam. Sprinkle brown sugar over top. I get about 10 smaller bars when they're thinner in a larger pan, 6 small-sized bars when they're thicker in a smaller dish.
These would be super easy to modify...Use applesauce instead of pumpkin, I've also been successful using crushed pineapple, and pretty much any fuit. Lets hear your variations!
