Cobb Salad for One- Unchained Recipe Contest

Ingredients

4 large Romaine lettuce leaves1 medium tomato1/2 ripe avocado1 hard-boiled egg4 oz. boneless chicken breast, without skin
1. Boil 1 large egg.
2. In a 12-inch skillet, sprayed lightly with non-stick spray, cook the chicken breast.
3. Chop or tear the lettuce leaves in to bite-sized pieces.
4. Chop all remaining ingredients.
5. Arrange ingredients into rows on plate.
Enjoy with your favorite light salad dressing.
This salad is a healthier choice and has been made much lower in fat than the restaurant version by leaving out the olives, bacon, bleu cheese crumbles, bleu cheese dressing, and cheddar cheese.

You are right. I should have! I personally do not like blue cheese at all and wanted to leave the idea that you can have a Cobb salad with any dressing you like. Even if you add a lowfat blue cheese dressing and some bacon bits it would still be in a great calorie/fat range.

I love cobb salad, but somehow this wouldn't do it for me ... & that's alot of calories to come in a far cry from the real thing. - 11/10/09

The real thing has about three times the calories and 5 times the fat. Ouch!
