Taco Salad

Ingredients
Iceberg Lettuce (salad), 1 head, medium (6" dia) Onions, raw, 1 cup, chopped Green Peppers (bell peppers), 1 cup, chopped Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) 1 Tablespoon Fresh CilantroGround beef, lean, 1 #*Sargento Reduced Fat Mexican Cheese, 8 oz *Old El Paso Taco Seasoning, 1 packet Water, tap, 3/4 cup (or whatever the taco seasoning calls for) Salsa, 1 cup Sour Cream, reduced fat, .75 cup Tostidos Baked Tortilla Chips (reduced fat) (not included in nutritional information)
Directions
Break up lettuce and put in large bowl. Chop onions, green pepper, tomatoes and cilantro and mix in with the lettuce.

Fry the hamburger and drain. Put in the taco seasoning and water and cook until thickened.

Dish up the lettuce and put hamburger mixture on top. Layer cheese, salsa and sour cream.

Break up some baked tostidos and use as garnish.

For mine I use 2 cup lettuce mixture, 1/2 cup ground beef w/seasoning, 1/4 cup cheese, 2 tablespoons salsa, 1 tablespoon sour cream, 8 tortilla chips.

    I could eat this (at least) once a week! Thanks for sharing! I might tweak it using only 1/2 the taco mix, with ground turkey, and no salsa (just on the table for those who want it) and plain yogurt for the sour cream. mmm... my mouth is watering! LOL!! - 1/12/09

    I make thi dish quite often and everyone loves. I have a few variations though. Try using ground turkey instead of beef, Use lower sodium taco seasoning and cruch up your chips ( you can use much less without even realizing it). Even without the variations it is a very good recipe. - 1/4/09
