Marinated Cold Vegetable Salad

Ingredients
1/2 cup sugar1/3 cup white vinegar1/4 cup vegetable oil1/2 tsp pepper1/4 tsp salt1 16oz can French style green beans1 16 oz can peas1 16 oz can corn, drained1 2 oz jar diced pimentos or roasted red peppers1 cup chopped celery1 green pepper finely chopped1 bunch green onions chopped1 8 oz container crumbled feta cheese1 bunch broccoli cut into small flowerets1 cup cucumber, peeled & sliced2 cups cauliflower
Directions
Combine the first 5 ingredients in a pot and bring to a boil stirring to dissolve the sugar and then cool.

Combine all the vegetables and stir in the vinegar mixture and then cover and chill for at least 6-8 hours.

You can use most any vegetable since this really lends itself to creativity.
