J's Confetti Tuna

Ingredients
3 oz Tuna Packed in water (small can)1 small carrot1/2 C cucumber1/4 C red onion(optional)2 Tbs Pickle Relish1 Tbs Light Mayo
Directions
Combine all in ingredients in a food processor (I use a hand cranked one) until all the veggies are chopped and all ingredients are mixed with the light mayo. Trust me 1 tbs of mayo goes a long way in this recipe. Serve with some light whole wheat crackers for a tasty lunch. Makes 1 serving for 191 calories however there is enough for 2 servings so you can save some for the next day or as a post workout protein.
