Health Waffles

Ingredients
2 cups flour mixture (Example:¾ c. whole wheat, ¾ c. unbleached white½ c. oat)¼ cup ground flax seed1 teaspoon salt4 teaspoons baking powder2 tablespoons white sugar1 cup soy milk1/4 cup walnut or vegetable oil1 teaspoon vanilla extract2 egg whites (1/3 cup)Water 1/2 cup or as needed
Directions
1.In a large bowl, mix together flour, flax seed, salt, baking powder and sugar
2.Stir in the milk, oil and vanilla.
3.Let mixture rest 10 to 30 minutes
4.Preheat waffle iron to desired temperature.
5.Beat egg whites into foam.
6.Fold egg whites into the batter.
7.Thin with water as needed.
8.Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp.
9.Serve immediately or keep warm in a 175 degree oven.
Serve with fruit, yogurt and maple syrup.
