Kale and Potato Soup

Sautée the onions and garlic in the olive oil. Add the potatoes and enough water to cover them by 1 inch. Bring to a boil and add the vegetarian chicken broth. While they cook, prepare the kale: wash it and strip the leaves off of the stalks. Drain and slice finely. Cook in a covered pot in some water, until done, about 20-30 minutes.
Mash the potatoes roughly when they are cooked and add the soy milk. Add the cooked kale, a little freshly-grated nutmeg and white pepper, and season to taste with salt.
