Pumpkin Applesauce Bread

Ingredients
2/3 Cup - Egg substitute (Egg Beaters)2 - large Eggs Beaten 1 cup unsweetened Applesauce2 cups of Pumpkin (not pie filling...just pumpkin) 3 1/2 Whole Wheat Flour (may use all purpose if you prefer..it may change the nutritional facts though) 1 tsp. Cinnamon1 tsp. Nutmeg1 1/2 tsp. Salt
Directions
1. Beat eggs/egg substitute with sugar.
2. Add applesauce and pumpkin. Mix
3. Sift in flour, spices and baking soda.
4. Pour into loaf pans

Bake at 325 for an hour or until toothpick comes out clean.

Will make 3 large loaves of bread = 15 - 2 slice servings

I modified this from my Grandmother's Zucchini bread recipe... just use grated zucchini instead of pumpkin. You can also add walnuts or chocolate chips for added flavor (and calories!)

    Both the sugar and the flour are missing from the nutritional information - This is totally inappropriate and inaccurate - 5/15/11

    The sugar is missing from the ingredients - I am going to guesstimate 1 cup at least since there is so much flour and this makes three loaves. You might want to change it since the calories then are not accurate when you add to your meal planner. :) - 11/7/09
