GF Parmesan Crusted Sea Scallops

Ingredients
8 oz Sea scallops, fresh or thawed1 tbsp Butter, meltedCrust:6 Glutino crackers, crushed1 tbsp Parmesan cheese, grated0.5 tbsp Dried parsley0.25 tsp Paprika
Directions
0. Move the oven rack to the 2nd or 3rd position so you won't scorch the scallops, and set the oven to broil. Coat a cookie sheet or pan with cooking spray.

1. Mix all the Crust ingredients together in a Ziploc bag.

2. Wash the scallops and pat dry. Brush both sides of the scallops with the melted butter.

3. Place the scallops in the Ziploc bag, seal the bag, and shake to coat the scallops with the crust mixture.

4. Arrange the scallops on the sheet/pan and broil for 10 minutes or until they are done.

Serve with steamed veggies or over gluten free pasta with a cream sauce.
