15 Bean Soup

Ingredients
20-oz. pkg. dried 15-bean 5 14-1/2 oz. cans Low Sodium chicken broth2 cups chopped carrots1-1/2 cups chopped celery1 cup chopped onions2 Tbsp. tomato paste1 tsp. Italian seasoning1/2 tsp. pepper14-1/2 oz. can diced tomatoes
Directions
Soak beans in 2 quarts water overnight, drain water, combined all ingredients except tomatoes in slow cooker. Cover. Cook on low 8 to 10 hours, or until beans are tender. Stir in tomatoes. Cover. Cook on high 10 to 20 minutes, or until soup is heated through.
