Finnish Cucumber Salad (Low Cal Low Sodium)

3 med. cucumbers1/2 c. onions1/2 c. Splenda1/2 tbsp. Mrs Dash Original Blend1/2 tsp. white pepper1/2 c. white wine vinegar1/2 c. snipped fresh dill or 2 tbsp. dried dill weed
- Cut cucumbers crosswise into 1/16 inch slices.
- Place in bowl with a tight fitting cover.
- Mix Splenda, Mrs Dash and pepper; sprinkle over cucumbers.
- Cover. Shake to coat cucumbers.
- Pour vinegar over cucumbers; cover.
- Refrigerate at least 24 hours.
- Sprinkle with dill and toss before serving. Serves 4.
Feel free to add a couple of more cucumbers or more onions. The calorie count won't raise too high. Another variation is to add tomato.

Family liked this. We used Stevia granular. Also, I substituted my own guesses for a mix a little like Mrs. Dash from ingredients I saw used. This works well for Low carb as well - in addition to low fat, low sodium and low calorie. Our family has a combo of needs and it works... - 2/28/18
