Baingan Ka Bhartha

* Eggplant, 1 big (remove) * *Crisco Pure Vegetable Oil, 2 tbsp (remove) * Onions, raw, 1 cup, chopped (remove) * Red Ripe Tomatoes, 1 large whole (3" dia) (remove) * Salt, 1.5 tsp (remove)
Dice Onions and tomatoes into little pieces.
Heat 2 tbsp of oil in a pan and saute' onions and tomatoes until onions are golden brown. (You can add either green or red chillies if you have a palate for spice)
Meanwhile roast eggplant on an open flame directly until the skin is burnt completely. And peel the skin.
Add it to the onions and tomatoes and mash using the blunt end of a ladle. Cook it in its own juices for 5-10 minutes with occasional stirring. Add salt and mix.
