Ingredients
1 Can Tuna (any brand, any type)1/4 Cup bread crumbs ( I used seasoned IN cakes)1 medium egg1/2 medium onion chopped small1/4 Cup milk (2% or lower)2 Tbl Parmesian Cheesebread crumbs to LIGHTLY coat cakes (about 1/4 cup)Olive oil or spray oil to cook cakes
Directions
Drain tuna; combine all but last two ingredients. Form mixture into cakes about size of palm - about 1/4 cup). One can makes 4 cakes (2 servings). Sprinkle second crumbs onto plate and PLACE cake into it then turn with spatual. Trick is to NOT get too many crumbs (cornmeal can also be used here). Just enough to help hold cakes together.

Heat oil in pan (a Tbl or so will do) or spray pan with cooking spray and cook cakes 3-4 minutes on each side, turning carefully with spatula.

Serve plain or with dill sauce. My family loves them.

Quick, easy , and tasty! I used corn meal on the outside of the cakes. I've also used canned salmon in the past for a slightly different flavor :) - 10/29/09
