"Sour Cream" and Chive Mashed Potatoes

440 grams cooked, peeled potatoes100 grams Greek yogurt1 ounce neufachatel cheese1/4 cup low sodium chicken brothDried chives, salt, pepper to taste (~1/2 T chives, 1/4 t salt, 1/4 t pepper included in nutritional info)
Cook potatoes (this is why I put prep time as so long; I wrapped them in aluminum foil and put them in the oven to bake. Once cooked through and cooked, I peeled and refrigerated. When I was ready to make the potatoes, I reheated them in the microwave until hot.)
Add yogurt, cheese, and chicken broth. Use electric mixer to mash potatoes before turning on medium to high speed and blending ingredients until fairly smooth. Add chives, salt, and pepper; continue mixing until blended throughout.
Serve hot. Makes 4 servings
