2 Eggs1 Tbsp Soy Milk1/8 Tsp Baking PowderSalt and Pepper to taste
Spray a small frying pan with Pam or a small pad of butter. Then place on medium-low heat.
In a separate bowl, mix two eggs, splash of milk (I use soy), pinch of baking powder and salt and pepper to taste.
Whisk together.
Pour into heated pan.
Let cook until fairly solid(approx 4 min), then flip half over to make a half crescent shape.
Let cook for another minute then flip.
Let cook until your personal dryness preference has been attained.
Yields 1 omelet.
