Maple Glazed Salmon

Ingredients
1 pound salmon steaks (configured with pink salmon, not atlantic)1/4 tsp salt1/4 tsp freshly ground pepper1/4 cup grapefruit juice2 Tbs balsamic vinegar2 Tbs maple syrup2 garlic cloves, minced1 Tbs olive oil
Directions
1. Sprinkle the salmon steaks with salt and pepper. Preheat the grill or broiler. Spray the grill or broiler rack with nonstick cooking spray.

2. In a small nonreactive saucepan, combine the grapefruit juice, balsamic vinegar, maple syrup and garlic. Bring to a boil and cook about 5 minutes; stir in the oil.

3. Brush the steaks with the glaze; grill or broil until cooked through, basting frequently with the marinade, about 5 minutes on each side.

    It tasted kind of like a barbeque sauce on fish, which tasted as if the glaze would have been better on chicken, I could eat it, and it was okay, but I wouldn't bother to make it again. But then again I only had apple cider vinager. that could have something to do with it. - 6/5/14
