Roasted Garlic and Vegetable Spaghetti

Ingredients
1 cup Whole Wheat Spaghetti (or whole wheat pasta of choice)1 cup mixed veggies: broccoli, cauliflower, and carrots2-3 TBSP onion2-3 TBSP red peppers1 TBSP extra virgin olive oilRoasted Garlic Seasoning
Directions
(prep/cooking time anywhere from approx. 20-30 minutes)

Chop and slice up all veggies and put into a pot of boiling water.
Cook pasta according to package instructions. By the time the pasta is done, the veggies should be cooked as well.

Drain the pasta and toss with the olive oil and seasoning. Plate this and add the cooked mixed vegetables on top.
