Blueberry Bran muffin

Ingredients
1.5 cups wheat bran1 cup light soymilk.25 cup unsweetened applesauce.25 lowfat plain yogurt.25 cup egg substitute.25 cup honey.5 tsp vanilla.25 cup flax seed flour.25 cup wheat germ.5 cup whole wheat flour1tsp baking soda1tsp baking powder.5 tsp salt1 cup blue berries
Directions
in a large bowl mix applesauce, soymilk, yogurt, egg, honey, vanilla and wheat bran. Stir in flours, wheat germ, baking soda, baking powder, and salt. Combine mixtures. Fold in blueberries. Bake at 375 degrees about 15-20 min.

    Very moist and tasty! I used raisins instead of blueberries and a bit of rye flour instead of the flax, but they turned out great. - 5/14/10

    These came out really moist. I also used skim milk instead of soy milk because it's what I had handy. The only complaint I heard was that it could have more blueberries, other wise they were well liked. - 1/19/09

    This recipe was really good! I made "mini" muffins with it. They are fabulous. Not too sweet, but pack plenty of delectable flavor. I used Potassium substitute instead of salt and skim milk instead of soy milk. I will most definitely make these again! - 1/18/09
